We have one large eating olive tree. All the other olive trees on the land are for oil. We spent a day harvesting the eating olive tree. We don't have olive nets so used sheets instead. Every olive was individually checked for tiny holes caused by frip flies. Any olives with evidence of this was discarded. We managed to harvest 13.4kg from the one tree.
These olives then had to be cured in salt water for 21 days to remove the bitterness before jarring up in marinade for a further 3 weeks before eating.
